Vegetarian Beer Chili

Ingredients

  • 2 tablespoons olive oil
  • 1 large green bell pepper (diced)
  • 1 large red bell pepper (diced)
  • 1/2 red onion (finely diced)
  • 1 tablespoon garlic (minced)
  • 28 oz. diced tomatoes
  • 4 oz. chopped jalapeños (or green chiles)
  • 4 oz. tomato paste
  • 15 oz. kidney beans (drained and rinsed)
  • 15 oz. black beans (drained and rinsed)
  • 15 oz. garbanzo beans (drained and rinsed)
  • 12 oz. light beer (we used a lager)
  • 1/4 cup chili seasoning
  • 1 tablespoon maple syrup
  • 1/4 teaspoon sea salt

Steps

    Heat 2 tablespoons of olive oil in a large stockpot over medium/high heat.

    When olive oil is fragrant, add onion, bell peppers, and garlic. Sauté until the onions are translucent, about 5 minutes.

    Add the rest of the ingredients to the pot and bring to a boil.

    Once boiling, turn to low heat and let simmer for 10 minutes before serving.
