Ingredients

  • 2 cups (475ml) whole milk
  • ¾ cup (150g) granulated sugar ((or cane syrup, honey, or maple syrup))
  • 3 tablespoons (43g) salted butter
  • ½ teaspoon (3ml) vanilla extract
  • 1 12-ounce can evaporated milk
  • 1½ cups (300g) granulated sugar
  • ½ teaspoon (3ml) vanilla extract ((optional))
  • 3 tablespoons (43g) butter
  • 1 cup (237ml) water
  • 2 cups (402g) granulated sugar
  • 4 cups (500g) powdered milk ((nonfat or full-fat))

Steps

    Mix the sugar and whole milk in a medium saucepan.

    Place saucepan over medium heat. Bring to a boil, reduce heat to low, and let it simmer without stirring until the mixture has reduced by about 60% and is creamy (about 40 minutes).

    Remove from the heat. Whisk in the vanilla extract and butter.

    Let it sit until it cools completely. Get rid of any sugar that has crystallized on the side of the saucepan.

    Transfer it to a bowl or jar. Cover and refrigerate for up to a week or use as needed.
