Gluten-Free Pita Bread

Ingredients

  • 1¾ + 1 tbsp cups King Arthur Gluten-Free Bread Flour
  • ½ tsp salt
  • 1 tsp granulated sugar
  • 2¼ tsp instant yeast
  • ¾ cup warm water ( (110°F/43°C))
  • 1 tbsp olive oil

Steps

    Gather and measure all ingredients.

    Whisk together flour, salt, sugar, and yeast in a large bowl.

    Add warm water and olive oil. Mix for 2-3 minutes until a soft, sticky dough forms.

    Cover and let dough rise for 1 hour in a warm place until slightly puffy.

    Meanwhile, place a sheet pan or pizza stone on the middle rack and preheat the oven to 475°F (245°C) for 30-45 minutes.

    Divide dough into 6 equal portions. Press into ¼-inch rounds using oiled hands on parchment paper. Rest the shaped rounds for 10 minutes.

    Transfer pita dough directly to the preheated sheet pan via parchment paper. Bake directly on the hot sheet pan for 7-8 minutes until puffed and lightly golden.
