Cauliflower Fried Rice

Cauliflower Fried Rice

Ingredients

  • 1 head cauliflower, (about 2 ½ cups chopped )
  • 2 tablespoons sesame oil
  • 1 chopped small white onion, (about ¾ cup)
  • 1 cup frozen peas and carrots, (thawed)
  • 2 eggs, (lightly beaten)
  • 2-3 tablespoons soy sauce, (more or less to taste)
  • 2 tablespoons chopped green onions

Steps

    Rinse and chop the 1 head cauliflower, into florets and put them into a food processor. (If you don't have a food processor continue to chop the cauliflower into tiny pieces.) Pulse the cauliflower until it is small and resembles rice.

    Preheat a large skillet or wok to medium heat. Pour 2 tablespoons sesame oil in the pan. Add 1 chopped small white onion, 1 cup frozen peas and carrots, and fry until tender.

    Slide the onion, peas, and carrots to the side, and pour the 2 eggs, onto the other side of the pan. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the vegetables.

    Add the cauliflower to the veggie and egg mixture. Pour the 2-3 tablespoons soy sauce, on top. Stir and fry the rice and veggie mixture until heated through and the cauliflower is tender. Add 2 tablespoons chopped green onions if desired.
