Ingredients

  • 16 ounce lobster ravioli
  • 2 tablespoons unsalted butter
  • 1 small white onion (finely chopped)
  • 1 teaspoon minced garlic
  • 1 tablespoon tomato paste
  • ½ cup sun dried tomatoes
  • ½ teaspoon salt
  • ½ teaspoon ground pepper
  • ½ teaspoon dried oregano
  • ¼ cup low sodium chicken broth
  • ¾ cup heavy cream
  • ⅓ cup parmesan cheese (grated)
  • 2 tablespoons fresh basil (chopped)
  • 2 lobster tails (cooked and cut into chunks)

Steps

  1. 1

Cook the lobster ravioli according to the package instructions and set it aside.

  2. 2

In a large skillet, melt the butter. Once the butter is melted, add the chopped onion and garlic. Sauté for 2-3 minutes.

  3. 3

Add the tomato paste, sun-dried tomatoes, salt, pepper, and oregano. Stir in the chicken broth and cook for a couple more minutes. Add the heavy cream and bring it to a boil.

  4. 4

Using an immersion blender, blend everything together to get a creamy sauce. Allow the sauce to simmer for 2 minutes.

  5. 5

Sprinkle the Parmesan cheese into the sauce, then add the cooked ravioli and lobster chunks. Toss well. Add the chopped basil leaves and remove the skillet from the heat.

  6. 6

Serve the lobster ravioli in creamy sauce while it's still warm to enjoy.
