Prep 30 min Cook 20 min Serves 2 Source

Ingredients

  • 150 g brown sugar (¾ cup. I prefer dark brown, but you can use light brown too.)
  • 2 tbsp corn syrup
  • ½ cup cream
  • 2 tbsp water
  • ¼ tsp sea salt
  • 2 tsp vanilla bean paste
  • 28 g unsalted butter (2 tbsp)
  • 2 espresso shot (with moka pot or espresso machine or ½ cup very strong coffee)
  • Hot milk (for espresso) (or hot half and half (for strong coffee) to top up)
  • Butterscotch sauce (to taste (recipe above))
  • 2 regular Tim Tam biscuits

Steps

  1. 1

Place the brown sugar, corn syrup, 2 tbsp cream, 2 tbsp water and sea salt in a saucepan. Heat the mix over medium heat until the sugar dissolves completely and the mix comes to a boil.

  2. 2

Reduce the heat and simmer for about 5-6 minutes.

  3. 3

Add the vanilla bean paste, butter and rest of the cream, and whisk until well incorporated. Bring to a simmer, and continue to simmer for another 5 minutes over low-medium heat.

  4. 4

Place the sauce in a bottle and let it cool.

  5. 5

Store in the fridge and use as needed.

  6. 6

Froth hot milk using a frother, or shake the milk in a sealable glass jar until frothy.

  7. 7

Add 1 espresso shot each to 2 x 6-8 oz cups.

  8. 8

Stir in 3 - 4 tbsp of butterscotch sauce per drink. Top it with milk and froth.

  9. 9

    Serve with Tim Tam biscuits.

  10. 10

Bite off 2 diagonally opposite corners of a Tim Tam. Dunk one end in the drink and sip the drink THROUGH the Tim Tam, until the biscuit is soaked through. Repeat as needed. Enjoy (I know you will)!
