Ingredients

  • 2 tablespoons olive oil
  • 8 ounces white button mushrooms (sliced)
  • 8 ounces baby bella mushrooms (sliced)
  • 1 large onion (diced)
  • 3 carrots (diced)
  • 2 celery stalks (diced)
  • 4 garlic cloves (minced)
  • 2 tablespoons tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon paprika
  • 1 ½ teaspoon salt
  • ½ teaspoon black pepper
  • 8 cups low-sodium vegetable broth
  • 1 tablespoon soy sauce
  • 1 cup pearl barley (rinsed)

    Heat the oil in a large pot over medium-high heat. Add the sliced mushrooms and cook until browned, 10–12 minutes.

    Stir in the onion, carrots, and celery, and cook until softened, about 5 minutes.
