Chili Cheese Fries

Ingredients

  • 1 pound lean ground beef
  • 1 onion (finely chopped)
  • ½ green bell pepper (finely chopped)
  • 15 ounces canned red kidney beans (drained and rinsed)
  • 8 ounces tomato sauce
  • 1 cup beef stock (or broth )
  • 3 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • ¼ teaspoon red pepper flakes
  • 6 cups french fries (cooked, about 32 ounces frozen)
  • 4 cups shredded cheddar cheese
  • toppings as desired (see notes)

Steps

    Cook fries according to recipe or package directions (we love this baked fries recipe).

    In large skillet brown ground beef, onions, and bell pepper until no pink remains. Drain any fat.

    Stir in remaining chili ingredients and simmer for 20 minutes or until the stock has cooked down and the chili sauce has thickened.

    Divide fries over 4 plates. Top with hot chili and cheese. Add additional toppings as desired.
