Instant Pot Chili

Ingredients

  • 1 tablespoon olive oil
  • 1/2 large white onion (finely diced)
  • 1 lb. ground beef (we used 85% fat)
  • ¼ lb. ground pork
  • 3 cloves garlic (minced)
  • 1 15-oz. can pinto beans (drained and rinsed)
  • 2 15-oz. cans kidney beans (drained and rinsed)
  • 1 15-oz. cans great white northern beans (drained and rinsed)
  • 1 oz. can tomato sauce
  • 1 15-oz. can diced tomatoes
  • 3 tablespoons tomato paste
  • 1 tablespoon maple syrup
  • 1 tablespoon hot sauce
  • ¼ cup chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon ground cumin
  • 1/2 tablespoon smoked paprika
  • 1 teaspoons salt
  • 1/4 teaspoon ground black pepper
  • 1 cup beef broth (chicken broth or water works too)

Steps

    Turn on the sauté feature and add 1 tablespoon of olive oil to the pot.

    When the olive oil is fragrant, add the onion to the pot and sauté for 4 minutes.

    Add the garlic to the pot and sauté with the onion for 30 seconds.

    Next, add the ground beef and ground pork to the pot and break them up into small pieces. Partially cook the meat.

    Add the rest of the ingredients to the pot and mix until combined.

    Place the top on the Instant Pot and turn the pressure valve to seal. Set Instant Pot to > manual > high pressure > and set time to 5 minutes. The Instant Pot will take around 15 minutes to build pressure before it begins to countdown from 5 minutes.

    When the timer goes off, quick release the Instant Pot by manually opening the valve. Once the steam stops, remove the lid, and give her a good mix.

    Serve immediately with your favorite toppings!
