Rich tonkotsu-style ramen with soft-boiled eggs, chashu pork belly, and all the toppings. A weekend project worth every minute.
Blanch chicken bones in boiling water for 5 minutes. Drain and rinse well.
Add bones to a large pot with 3L cold water, ginger, and garlic. Boil then simmer vigorously uncovered for 2–3 hours.
Roll pork belly tightly, tie with twine. Sear until browned all over.
Mix soy sauce, mirin, sake for braising liquid. Add to pork. Braise at 160°C for 2 hours.
Soft boil eggs: 6.5 minutes in boiling water, then ice bath. Marinate in soy/mirin 30+ minutes.
Strain the broth through a fine mesh sieve. Season with soy sauce and sesame oil.
Slice chashu pork into rounds.
Cook ramen noodles according to package instructions.
Divide noodles into bowls. Ladle hot broth over top.
Top with chashu, halved marinated eggs, nori, bamboo shoots, corn, green onions, and sesame seeds.
