Crisp romaine lettuce with a bold, creamy homemade dressing, crunchy croutons, and plenty of parmesan.
Make croutons: cube sourdough, toss with olive oil and garlic. Bake at 200°C for 10 minutes until golden.
Mash anchovies and garlic into a paste with the back of a knife.
Whisk egg yolks, lemon juice, dijon, and Worcestershire in a bowl.
Slowly drizzle in olive oil while whisking constantly to emulsify.
Stir in anchovy-garlic paste. Season generously with black pepper.
Tear romaine into large pieces. Shave or grate half the parmesan.
Toss lettuce with dressing until every leaf is coated.
Add croutons and remaining parmesan. Toss gently.
Serve immediately while croutons are still crisp.
