Individual molten chocolate cakes with a gooey flowing center. Deceptively easy and guaranteed to impress.
Preheat oven to 220°C (425°F). Butter 4 ramekins and dust with cocoa powder.
Melt chocolate and butter together. Stir until smooth. Let cool slightly.
Whisk eggs, egg yolks, and powdered sugar until thick and pale, about 3 minutes.
Stir melted chocolate into the egg mixture along with vanilla.
Fold in flour and salt just until combined. Do not overmix.
Divide batter evenly among prepared ramekins.
Bake for 10–12 minutes until edges are set but center still jiggles.
Let rest 1 minute, then run a knife around edges and invert onto plates.
Serve immediately with vanilla ice cream or whipped cream.
