Ingredients

  • 3 cups all purpose flour
  • 2 3/4 cup sugar
  • 1 tbsp baking soda
  • 1 tsp salt
  • 1 tbsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 cup vegetable oil
  • 1/2 cup apple sauce
  • 1/2 cup crushed pineapple
  • 3 medium bananas (mashed)
  • 8 oz cream cheese (softened)
  • 1 tsp vanilla extract
  • 4 tbsp butter (unsalted)
  • 4 cups powdered sugar
  • 2 tsp milk

    Preheat the oven to 325 F.

    In a large bowl, combine all the dry ingredients: flour, sugar, baking soda, salt, and spices. Mix until well combined.

    In a separate large mixing bowl, combine your wet ingredients: eggs, vanilla, vegetable oil, applesauce, crushed pineapple, and mashed bananas. Mix until those are well combined.

    Slowly start adding the dry ingredients to the wet ingredients. You can mix by hand or use an electric or stand mixer.

    Mix until you have a nice, creamy cake batter–but DON’T over mix!

    Prep a 9 x 13 baking dish with nonstick cooking spray and pour the hummingbird cake batter into the prepared pan.

    Bake the cake at 325 degrees F for 1 hour and 20minutes, or until a knife inserted into the center of the cake comes out clean.

    Let the cake cool until it's at room temperature.

    In a large bowl, mix the cream cheese and butter until smooth.

    Add the powdered sugar, milk, and vanilla.Continue mixing (on low speed) until a smooth and creamy icing forms.

    Once your hummingbird cake is cooled, apply a nice, thick layer of icing on top of the cake.
