Ingredients

  • 1 ¾ cups gluten-free all-purpose flour with xanthan gum

  • ¼ teaspoon ground ginger
  • 2 large eggs
  • ⅔ cup packed dark brown sugar
  • ½ cup sugar
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 ¼ cups canned pumpkin puree

    Preheat oven to 350°F (175°C). Line a muffin pan with 12 paper liners or lightly grease it.
